Meet Ashley Davis from Copper Pot
Ashley has been running Copper Pot in Seddon for over five years now, serving the locals and tourists with flavours from all over the world.
From his travels in Europe, Ashley was inspired by the neighbourhood bodegas, tattorias and bistros you’d find in corners all over the continent, and he wanted to bring this food experience back home to Melbourne’s inner west.
We asked Ashley a few questions about his restaurant and what he loves about the Seddon community:
Q. How would you describe Copper Pot?
A. It’s a foodie’s road trip across Europe. It’s a high quality, approachable European bistro.
Q. How has your business changed over the last few years here in Seddon?
A. We have become a lot more approachable to more people. We see lots of different people in here looking for a unique food experience.
Q. What do you love most about the Seddon community?
A. The people. The local support over the past few years has been amazing. It also has a small town vibe with big town quality which I love.
Q. What is something people might not know about Copper Pot?
A. As a true local restaurant, we source most of our produce from farms around Melbourne - wineries as close as Sunbury, sardines from Williamstown and honey from our own hives.
